Recipe of the week

New recipe of the week... Okay maybe month or season may be the better word since it has been so long since I have tried something new. Anyways here we go!

Easy and Elegant Sea Scallops

1 lb sea scallops
1 tsp olive oil
1 tsp butter
1/2 cup fresh mushrooms, sliced
1/4 cup green onion, minced
1 clove garlic, minced
1/2 tsp pepper (white preferably)
1/2 cup dry cooking sherry
1/4 cup fresh parsley, chopped
Salt to taste

Heat oil and butter together in a skillet. Add mushrooms, onion, garlic, pepper, parsley and salt to taste. Saute until mushrooms are tender. Add scallops and sherry. Cook over very high heat until the sherry is reduced by half. When finished the scallops will e covered with an elegant light brown glaze.

DELICIOUS!!!!
